Wow, reading through the posts ... I had such a narrow approach to the question, but truly there are many replies for me.
The dancing of the "bud" type greens, whites, yellows is my first choice. I think my fave was Zhu Ye Qing. I have always enjoyed the simple pleasure of watching this in a taller glass as the leaves float vertically upwards or downwards. TeaFun. It is also rather relaxing.
Unfurling of Jasmine pearls goes back 8 or so years for me. Matcha, great answer, Olivier. Chinese greens are so much fun to watch transform miraculously from a rather nondescript twisted seemingly leaf fragment to an amazing "leaf set." I could say the same for oolong as well.
And not making the list for me, my fave teas, Japanese greens.
Started the day with a very nice session of Sencha Premier from Adagio. I think SweeTea agreed! TEAh took a sniff and kept going.
Next, Kame Gyokuro from O-Cha, this stuff is simply amazing.

I agree Pentox, altho' truthfully it was a very hard choice since there are so many good 'tea-leaf-quality' things about alot of the teas mentioned!Pentox wrote:I voted white/yellow. Silver Needle and certain yellow teas dancing with their buds is where it's at.
