Gaiwan questions
Ok after consideration i have decided to purchase a gaiwan, but i am stuck at the "now what" stage. Any suggestions on size and info on general gaiwan use would be appreciated. I mainly drink black tea at the moment but i am looking into oolong. is there a "certian amount of tea per ounce of water" rule i can follow?

He skips the 'rinsing' step but you can worry about that later.
Basic procedure is: with rolled oolongs, fill it about 1/4 with dry leaf; with loose oolongs try 1/3. What you are shooting for is enough to just fill the gaiwan with wet leaf after you've finished brewing.
About 90C/194F, 30 seconds for first infusion, and add 5 seconds for each after that.
That'll get you started anyway - you can fiddle with parameters and techniques however you wish. Temperature especially is one to experiment with.

I believe any gaiwan from YSLLC over $6 is a decent one. I would stay away from the clay ones though.

I got my glass sharing pitcher(s) from Daiso for 2 bucks and often brew in it directly with a small ceramic strainer to keep the leaves in, works great for stuff like alishan.



puershop, red blossom and some other US shops have some decent gaiwans at decent prices and you don't have to wait for shipping from china.
For your first gaiwan I would chose a 120 ml size and purhaps white.
