Yep, the Keemun is lovely (for me) so I know I'm not making it bitter. He's just not a fan of it and I think you're right - it is the faint smoky that he's confusing with bitterness.

I told him last night he's banned from the Keemun. I just felt too bad about putting sugar and milk in it! So I think now his Keemun will be made with an entirely different tea.

Most of my tea brewing involves taking care to measure the tea and time the steep. Other than that I don't fuss much with it unless I'm doing a puerh session.
