Indeed, the more we think we know, the less we actually do know.
Great to hear that you were in the end able to bring the sweetness out.

Yes, I too am amazed at how we can change parameters and totally nudge out a different nuance.ErikaM wrote:Wow, I just tried again with boiling water and it *is* sweeter with the hotter water. The roasted flavor is actually a bit more subdued as well, or maybe just offset by the sweetness.
The more varieties I sample the more I realize I do not understand tea. It's taken me this long to learn that cooler water is better, and then something like this comes along and shatters my worldview...
I agree Chip, learning on a daily basis with this amazing and wonderful continuing Journey of Tea.
Have a FAB TeaDay Everyone!
I have to say this is going to stay on my top 3 chart for a long time. It really does have that light EXOTIC honey sweet flavor mixed with twigs. I love the taste it leaves on the palate. Good luck trying this mates...

Okay now that it falls in the category of teas I would like to know what is the caffeine content for this tea...

I would guess on the lightish side, still in the range of greens though. Somewhere between hojicha and kukicha i'd say.
PURE speculation though of course. Being tencha it should theoretically have been upped a little bit by the shading, but stems don't develop the same way as leaves during shading. Also the other aspect being lightly roasted, supposedly roasting drops your caffeine, the light roasting I would think causes only a minor drop.

I just tried all 3 houjis from den's (gold, kuki-houji, and tencha-kuki houji). They are all good in my opinion. The kuki-houji had a nice sweet flavour but it tasted too much like drinking a cereal.. Gold was very good as well but lacked the sweetness.
Tencha-kuki houji cha seems to fit somewhere in between the two, with a nice smoky/roasted flavour that's not too overwhelming or cereal-like yet has the mild sweetness.
Unfortunately, for the price it's at, I think I'll go with houji-gold though.
