The trials of roasting

by 10/6 » Feb 27th, '09, 03:19

I have been trying to "freshen" some older sencha via the stove top. Seems to help a bit. Any suggestions?

A pleasant surprise, it turned out great. Pan fire is a fine fate for dead Sencha.

That was hilarious. Thanks for posting the link tenuki. I laughed my arse off when they poured what looked like a little pile of charcoal onto the plate. However, when they did the close up it looked like they had done a fine job of roasting the cheap sencha. I'm completely inspired to try on some of my poor aging sencha. Great time of year to experiment with this as we await the new season.

Would pan-firing work on, say, stale kukicha? It's Adagio brand that I got a free sample from a while ago and I never really got around to using much of it.

That would then be houji-kukicha. I love the stuff and make my own versus buying it since 100 grams would last me way too long.

You can also add toasted rice, genmai, to it. But fire the rice seperately since it takes much longer to roast.

So the houji-kukicha turned out quite well! At least I think so... I wasn't exactly sure how far to brown the tea before it was technically considered "burned". There was definitely some blackened pieces and the smell was a little odd. Not a charred smell, just odd... But the taste was not bad which is what counts right? I think I'm going to wind up actually ordering some of it to compare! Either way, great alternative to old kukicha :D LOVE it!

I have wanted one of these for a while. An old Japanese gentleman was roasting Kukicha at the World Tea Expo with one last year. I wanted to stop back and see if they sold them, forgot. :(

Nexius, glad to hear of your success!
