Seriously, I drink much more oolong than I used to and there are far more varieties than there are with sencha or Japanese tea overall. I think we're lucky to have so many choices. Sencha is still my favorite of all, but Taiwanese High Mountains and the Wuyi's are still high on my list.

Almost all my oolongs mentioned, including the Zhongshan I got from my local tea shop.

This afternoon I drank some shincha followed with some matcha.

I've let the shincha sit too long, and it's awesomness has diminshed, but still very good.

At the moment I'm drinking some TGY; tis okay.

All time favorite tea...there's a mom joke here, but it eludes me.

Zhongshan Baiye ... that's a Guangdong Dan Cong town, right? How many infusions do you usually get from it?

I don,t know what town it comes from. I've found Dan Cong a bit tricky.
How ever, I like this tea enough to have bought a pound.
I get 4 really good infusions.
I hope nobody cringes but using a ingenuiTEA filter, about 5 grams of leaves, 8 oz of good spring water for each time, full boil for the first, then the rest off boil. Time is 25sec, then roughly, 15,15,20.
Looking at my notes from awhile back I had 7 but that's a stretch using 170 to 180 degree temp(I can't find degree sign and my wife's not here to help), but still using about 20 sec for each infusion.
Taste is toasty, sweet,slight floral nose while drinking. Bright yellow color, I put my hands up, I just like it.

Nice review even without the ALT 0176 °! :lol: Thanks.

A pound, wow, you do like it! I like to go for the gold with Dan Congs and will sometimes get up to 20 steeps gong fu, but that's probably using a little higher leaf to water ratio and I can't get most of them to go that far ... plus I am pretty patient with very light tasting tea water.

Have you tried starting with a very short steep, like 10 seconds and working up, rather than using a long wake up steep? I have never tried it with the long initial, but maybe I will give it a try tonight. Again, thanks for sharing your experience.

The downside to DC, as you note, is that it is tricky to get just right and it can be nasty if you mess up! Rough on the mouth. Done right, however, nothing has nicer aromas! Also, BTW, for newbies to DC, there are dozens of them out there, each with its own character and taste.
