That is a great photo David! Hard to believe that is a shiro (straw ash) glaze. Looks like a pearl in an oyster shell.
Well, seriously, this is up to the user. There are all types of pieces, wan of all sizes, guinomi, yunomi, chawan, etc. I buy for tea use, and for predominantly Japanese greens. Though many members use them for many types of tea.

It is quite common for a particular "type" of teaware, etc. to be named after a city in Japan where the craft originated (although sometimes the craft was introduced from another country, Hagi has roots in Korea ... long story) and is practiced.
So, there is Hagi-yaki, Arita-yaki, Tokoname-yaki, etc.
