At the special minute I was sleeping.
For resteeping I either resteep until I'm bored of that particular tea or it goes weak...and I use my past experience to avoid that last weak brew when I can because I feel bad dumping it out but don't really enjoy drinking it either.
No tea yet today, I wanted some bitter coffee so I'm drinking instant espresso...thinking of brewing up a pot of Tie Guan Yin later.

I am playing catch up today.
This is a good topic, well, IMHO anyway. I have in the past focused on the smell of leaves in the pot after pouring as a good indicator of whether they hold more flavor or not. Also sight.
However, after 10 years, sight and smell of the brewed leaves is more of a pleasure than a necessity for most teas, as I rely mostly on past experience and just do it.
Somehow I feel I should go back to the old way as I really enjoy that aspect of seeking out the last bits of flavor from the leaves.
