When talking about Japanese greens, I agree with chip it is really hard to decide. I like the mellow blend of flavors of the first infusion, I love the very pronounced color of the second infusion. And the third infusion is just all around good. The fourths and fifths are decent but nothing worth writing home about.

Concerning sencha, it really depends on the tea. I've had senchas that I've liked the third brewing the best, most often the 2nd, and sometimes the 1st. It changes all the time cause I'm always experimenting with different brewing parameters.

With greens, either 1st or 2nd.
With puerh, often 3rd, 4th, or 5th, depending of course on the pu.
