I love to listen to Simon and Garfunkel, the Beatles (and solo Paul, George, and John), Elton John, John Denver, Bob Dylan, Eric Clapton, Bob Marley, Hawaiian music, and any Indian music I can find (which isn't saying much). Sometimes Queen, David Bowie, a little Andrews Sisters, Billy Joel, Jimi Hendrix, or Led Zeppelin.

Pretty random huh? I'm not into the "it's only good if nobody else likes it" thing with indie-ish music, so I don't mind if some of these guys are a little mainstream.

There's a lot more, but that would be the first 10 or so who jumped out at me. I also love classical music, specifically violin (which I studied), more specifically Itzhak Perlman (whom I saw several years ago in Boston); 50s; 80s; and Celtic music.
