I emailed Zojirushi to see what their non-stick interiors were made of. This is the reply I got:
Thank you for your inquiry.
All of our water boilers have a stainless steel inside liner with a
non-stick coating. The non-stick coating is made of POLYFLON from Daikin.

I don't know how different Polyflon is from Teflon, but I'm sure you could research it to see if there are any health risks associated with it.

FWIW - I've used my zoji pot for years without one scratch or flake... except for the one pushing the dispense button....

PS - IIRC, Tiger is another good brand for less money.

Ok, why a non-stick interior for something that heats water? Water doesn't stick to anything! Is it the mineral build up?

I believe it's to deter the formation of scales.
