I always sift, just as I go. After preheating the chawan, I sift directly into it.

Has anyone tried the matcha from Zencha? How much I am liking sencha (which was a bit of a suprise) has me curious to try matcha...I think I will give some from O-cha a try since everyone seems to like them but it´s mostly Uji matcha and I want to try Yame too, also the Zencha matcha seems a bit more affordable...especially the Matcha Moe, I wouldn´t feel bad cooking with that one which I also want to try...but is it good for drinking too?

It is hard to go wrong with either sources of Matcha, both are very good yet different. O-Cha specializes in Uji Matcha I think while Zencha focuses more on the Yame (except for the one Uji organic).

I have not had Zencha's Matcha Moe however, yeah you could use it for cooking if it did not suit your tastes otherwise. I have done this as well with matcha that just was not doing it for me on its own.

I have some matcha recipes I really want to try but I do not think I will use a whole can of matcha for that before it goes stale so I would like it to be enjoyable to drink too! But not so expensive it makes me cringe placing it into cookie batter xD

i do recommend the matcha moe. i find it has all the characteristics of a "good" matcha. however, expectations can define a tea more than taste i think. it is a very nice everyday matcha, but it will not offer the rich or subtle flavors of higher quality matcha. if you want every cup of tea to reach those peeks for you, i suggest you choose something else.

No sifting aversion, simply a step less to do, a piece of hardware less. At work for instance, it is much more pratical to simply mix matcha with a bit of water and work it into a paste.

Whisking competitions: If I'm not mistaken, Okakura mentions matcha whisking competitions that were (still?) held in Japan.

To answer your question, if I were to chose a matcha to drink it often, I would choose something that can be made as very light usucha or a modern style koicha, something around the entry level koicha, somthing around 2000 - 2500 Yen, like maiko`s matsuno midori or Chiyo Mukashi, or horaido`s miyako no shiro HG.

those huge 200g tins of good matcha are a bit scary though :shock: :lol: I´m glad they have the 40g caddy´s too! :mrgreen:

How do the above suggested matchas compare with the most expensive 'bulk' organic one (at $40 for 100g) from Yuuki-cha ? I'm asking in the context of 'starter' matchas since at $40 for 100g it is not expensive at all.
