Uji no tsuyu sencha (green) I picked up at a local Asian grocery.
I found this tea does well cold brewed for me. I used a heaped teaspoon steeped with 12-13oz of cold water in the fridge for approximately 10 hours. Flavors from the first steep are vegetal and slightly sweet, with little to no astringency. The second steep is slightly sweeter and more grassy.
I'm going to keep an eye out for some better sencha to try.

Re: Official what GREEN are you currently drinking?
Today I am having a break from pu'er teas. At the moment I am sipping an excellent Uji Asamushi Sencha "Ujibashi San no Ma" from O-Cha.
Re: Official what GREEN are you currently drinking?
My daily Japanese green - sencha karigane otsuusan brewed in a Kenji nerikomi Kyusu that seemed destined to bring out the best of this tea.

Re: Official what GREEN are you currently drinking?
I just purchased the Gyokuro superior and the Sencha superior from Hibiki-an, and I cannot get good brews out of either of them. I am using 1.2 g per oz of 140 degree water for the Gyokuro, and brewing for 1.5-2 minutes. I am using .6 g per oz for the Sencha and brewing at 167-176 degrees for 1 minute. I also noticed that, upon opening the bags of tea, that I don't get the same heart-stopping aroma as when I open a bag of O-cha tea. Any suggestions?

Try to describe the tasting experience, ie., bitter, weak, etc.davidglass wrote:I just purchased the Gyokuro superior and the Sencha superior from Hibiki-an, and I cannot get good brews out of either of them. This Gyokuro doesn't have the brilliant aroma of others I have tasted. (In fact, there was hardly any smell when I opened the bag of tea). There is no thick mouth feel or sweetness or sea vegetable (or spinach) taste.

To Tead Off:
I may try some of the Gyokuros and Senchas that you mention. I have been buying from O-Cha, but I want to see what else is out there.
My background was working in Michelin 3-star restaurants in France and in restaurants around the world, and I'm passionate about food. I especially like to find new tastes, whether it be food or wine or Japanese green tea.

I haven't tasted this gyokuro, but generally, I would use 5g/60-70ml vessel, for 2 minutes at 50c. If I can't get much out of it, I wouldn't buy it again.davidglass wrote:Try to describe the tasting experience, ie., bitter, weak, etc.

Sometimes a tea needs to rest from the journey. I will usually remove it from the bag and put it into a caddy of some sort and let it sit for a week or two. This goes for many teas. Maybe I am too fussy.

Re: Official what GREEN are you currently drinking?
50c=122F, which is quite cool for a Gyokuro. Also, 2.5g per 1oz of water is a lot of tea. However, I will try it tomorrow morning. (We are 12 hours behind you on the East Coast of the US).Tead Off wrote:I haven't tasted this gyokuro, but generally, I would use 5g/60-70ml vessel, for 2 minutes at 50c. What is your most favorite Gyokuro these days?
Re: Official what GREEN are you currently drinking?
I think the Yame Gyokuro may be my favorite but the vendor no longer has it.davidglass wrote:What is your most favorite Gyokuro these days?
Maiko has some good ones.
If I were you, I would do a systematic search and try as many as possible. I find recommending teas to be very personal and opinions vary widely. No two drinkers taste the same way.

I tried the Gyokuro using your suggestions, and I think the tea itself is not a good one.
Did you buy Yame Gyokuro from O-Cha?
I will start ordering some new Gyokuros from different vendors.
Thanks for your help.

The Gyokuro tasting package from Maiko looks like fun.
