Jade Tips from Imen from a TCer ... very nice indeed! Reminds me a lot of Zhu Ye Qing, which is a fave 5 Chinese green.

Zencha Sencha the Ultimate -
Holds up to 4 steeps better than anything else I have tried. However, the flavor is a bit different. I have brewed it four times and I'm not liking it as much as their Takumi.

5:3 leaf to water ratio
140* in preheated pot
1-1.5 minutes to taste ... comes out remarkably like gyo leading me to presume it has gyo varietal included, but grown in the sun.
Further steeps, slowly increasing temps with times of 15-30 sec, 60 seconds, 90-120 seconds, etc.

Today's green was the rolled Jin Xuan Spring 2010 from Norbu.

Warashina Supreme from O-Cha. I have used a 1:1 ratio (68°C/90" - 70°C/30" - 75°C-60") which gave me a light tea, maybe too light. I have to try using more leaves. Brewing method on the bag suggests using an higher temp too. I guess I have a lot to play with... In the end, 50g won't be too much !

Two Tai Ping Hou Kui green teas
Head to head comparison of an inexpensive version from Wing Hop Fung, and a fancier grade from Jing Tea Shop.

Jing's version has larger, more intact leaves, and the color is brighter and fresher


I used 2 grams of tea in gaiwans with about two and half ounces (75mL) of water at 160-165 degrees per infusion, and infusions times of 45 seconds, 1 minute, 1 minute, and 90 seconds.

Even though the leaves are quite long, they soften enough to fit in the gaiwans.

The Jing tea is not only lighter in color of liquor and leaf, but cleaner and lighter in flavor, with lemon notes amid the sweet pea vegetal flavors. There is a bit more spiciness in the WHF version, probably a bit of astringency coming out. This was consistent through all of the infusions, the greater refinement and higher quality of the Jing tea being obvious.
