Surprised to read about bitterness in the Sayamakaori, which was my favorite among the 4 shinchas I tried from Yuuki-cha this year. What time/temp/leaf-water ratio?

1g to 1 oz of water. Temperature at 165 in a preheated kyusu with 90 seconds. I probably should experiment some more and drop the temp 5 degrees with 60 seconds. I'll put that on my list of things to do.

I preferred that one at my usual for sencha: same 1g/1oz leaf/water, preheated kyusu, 160 degrees, 30", 10-20", 30-60", 1 min, 2 min. Not much bitterness.

I am drinking 3 different ones right now:
-Japan Sencha Hiki First Flush (SpecialTeas, who is no more. But here is more info on that tea: http://steepster.com/teas/specialteas/1 ... irst-flush)
-Organic Sencha (Den's Tea) Very good, tasty tea, and not too expensive ($9.50 for 2oz)
-Fukamushi Sencha-Yame (Den's Tea) One of my favorites from them. I got it in December when it was (very briefly) 20% off!

Opened a bag of Huang Shan Mao Feng (TeaSpring), brewed a bunch of leaves in a white gaiwan and wow! It reminded me so much of dragon well tea. A lot of green bean taste to it and the gan lasted for most of the morning. Tasty and very pleasant, what a nice way of starting the new day.
I am very impressed by this tea. I can't imagine what it would be like outside these inauspicious metal years (2010 & 2011).

Still awaiting my first order from Den's, but in the meantime, I just had my first matcha ever! (Matcha Senda, from Camellia Sinensis in Montreal where I live). Don't laugh, but I prepared it in my high-speed Vitamix blender, not wanting to spring for teaware before I knew I liked matcha. Well, I do, even though this matcha was quite dark green, vegetal, slightly bitter etc, it still had a delightful matcha aftertaste and I'm quite enjoying the 'matcha afterglow' and I will.
Any matcha favourites in the moderate-price range that are on the sweeter/creamier side? I think I'll do the 'matcha starter kit from O-Cha.
Now brewing a cup of Sencha Tsukigase, also from my local teashop. Smells lovely.

Speaking of O-Cha, just opened a new bag of Sencha 7132 Organic. This is remarkable organic sencha.
Joannar, virtually all new matcha drinkers have improvised to get it done before really getting the right equipment. Having the right equipment will certainly exponentially enhance your matcha experience.

Organic tenryucha sencha from yuuki, tasty and smells nice.

I'm drinking Xishan (West Hill) Green Tea. It's produced in very small quantities in Guangxi Province in the south of China. It's a creamy buttery green tea without any astrigency. It's really lovely stuff.
