Gong-fuing some middle-of-the-road Jasmin Mao Feng from Cantontea; pretty sweet, not overly jasmin-ey with good longevity and above all works pretty well in the heat.

Another day started with Gyoku-hou from O-Cha. I've been drinking this daily for about a week now, progressing a few days ago from the tiny celadon shiboridashi from Greenwood studios to my medium sized wood-fired Shino kyusu from Petr Novak, needing larger volumes of tea to get my fix. Now wondering if the remaining quantity of tea will keep up with this increasing requirement without an express-shipped refill order....

Currently sipping some Hojicha since it is the middle of the night here. I bought it from Hojosan. Really good, roasty/nutty flavors, yummy aroma. Somehow it pairs well once cold with sake too.

I've been drinking new season 2017 Chinese green for the past few weeks and been disappointed about them compared to my beloved Japanese greens. I've started brewing them at higher temps, moving up from 150° to 165° to 175°. Each increase has improved the results. It's the opposite of Japanese greens where lowering the temps from 150° has been improving the brews for most teas.

I think what happens is that I come off of a fall and winter of drinking Karigane and Gyokuro and I can't believe that such high temperatures are safe to use on greens. Next year I'll consult my records.

Thank you for welcoming. I was surprised to taste green tea with almost no astringency at all. I just prepared Winterpeace from Dr. Chen which I have usually steeped in water of 190-195 but today steeped at 200 for 15 seconds, for the first infusion and only 10 seconds for a second and third. Really excellent. I had not planned the change but forgot to reset my kettle.
high temp. & short steeping time gives me the very best green tea; lower temp. & longer steeping gives me an excellent green oolong.
