Sae Midori is classified as a "natural Gyokuro" varietal, naturally sweet and very little bitterness or astringency. Some say it is too mild for their tastes. When this happens, the profile can be manipulated to make it more intensely flavorful.
BTW, Sae Midori is also a great home blender as well.

They are both very good. The shincha may be a bit more intense. In honor of Spring I decided to go with shincha versions of 2 of O-Cha's organic Senchas - the Warashina Supreme and the Oku Yutaka. I can actually drink my morning tea on my back porch - although it does cool off quickly.Chip wrote:Celllllebrate Shin-Cha, come on ...

Woohoo, seemed like shincha would never come. Now it is coming full steam ahead.
It is weird, I don't see shincha on Zencha's pages, seems like they have to give you the keys to the vault.
These two are really different from each other. You will enjoy the complexity of the Warashina and the simplicity of the Oku Yutaka.

So, this year could be interesting for not only shincha but for ichibancha. Shizuoka is likely the biggest supplier of sencha, and it is not only sold as Shizuoka, but is used a lot in blending ... we could see shortages and price increases sooner or later.Zencha wrote:Because of the sudden fall in temperature, the young tea leaves, nearly 50% of our tea garden in Shizuoka, suffered frost damage.

Yeah, thanks Dresden. I saw that. Just generally speaking, supply could tighten up and this could place pressure on prices. I am not saying this will happen, but bears watching I guess.

Yup....I would think that in general there will be a spike similar to what we saw with tomato and orange prices this year due to the late freeze in Florida.
