retroaroma (aftertaste)

Another article that I thought might interest some people here:

Bacteria In Mouth Help Make Certain Foods Tasty
http://www.sciencedaily.com/releases/20 ... 181811.htm

This article specifies grapes, onions, and bell peppers, however when I heard about this on one of the science radio shows, the scientist being interviewed said they believe that the same compounds are responsible for all after-taste/aroma (with aftertaste and aroma being used interchangeably).
Scientists in Switzerland are reporting that bacteria in the human mouth play a role in creating the distinctive flavors of certain foods. They found that these bacteria actually produce food odors from odorless components of food, allowing people to fully savor fruits and vegetables.
