Sake

by JM » Aug 29th, '09, 13:53

Any tips on picking a bottle and heating it? When I was in the Mayan Rivera this past April I drank a lot of it and loved it.

Suggestions?

I like better quality sake cold - you get more flavor. If you have sake that you really do want hot, you can put in a ceramic sake pitcher and let sit in hot water for a 10 minutes or so.

Guinomi is a sake cup, which many people on here like for tea as well (see hagi thread)

Like wine, sake can be anywhere from $2.00 a bottle to hundreds. You can get a nice high quality (drink cold) bottle for $10-20. I don't know if they sell them here, but in Japan you can get the giant bottles :D

I found the Sake World site very helpful in learning more about enjoying sake.

As JM says, it's best to heat the sake by putting it in a flask (tokkuri), placing that in a water-filled saucepan on the stovetop, and gradually heating the water. You also get the wonderful anticipation factor that way - sort of similar to waiting for tea to steep

The Sake World site also has an article here about temperature.

John Gauntner's e-newsletter on sake is also excellent. You can subscribe to it from that site.

Great advice. I'm almost done the bottle tho...
 I'm a whiskey and whisky drinker, this sake is VERY mellow, tastes good cold. I stuck it in the fridge for a half hour and on my last glass now. Sake is something nice and light for a warm and sunny day.

I like the warm sake, you can't taste the alcohol so much then, and it warms you up too. I haven't had the chance to try the chilled sake yet, but I should do that since they have sake in our supermarket :D

eSake might also be of interest.
http://esake.com/

It suggests that quality sake is served chilled now due to differences in brewing techniques.

I'll find out this weekend as we're going to Tei Tei Robata in Dallas which is known for its grilled seafood and its sake bar.

I'll report back!

The sake I had was good but I think I drank it too fast. I felt fine until the morning.
