Tea roasting
I posted about using a crockpot in the past for roasting and it seems that some others have also used this method well. Now I'm wondering... hmm... how about a convection oven? The house we moved into has a convection oven and I'm thinking it should work pretty well provided I don't fry the leaves.... maybe around 200' should be ok I think..

I have a convection oven here and I've tried this vs. rice cooker. The rice cooker is a lot safer but doesn't seem to really re-roast the tea if that's what one is after. With the oven, you can get a much deeper roast but control becomes a crucial issue. I would think experimentation would yield a method that would finally give good results. I'd just be worried about picking up smells from the oven myself. A crock pot is easier to clean and de-scent, but oven smells linger.
