I don't generally have this difficulty, but occasionally.
When I do, it seems to be Chinese greens and whites - I think because of the wider variety,

Japanese greens for me, which are certainly among my favorites, and some days they ARE my favorite, but not always.

+1! Example: I made the Fukamidori from Den's sampler - and had bought a 2oz bag of it - loved the sampler, but opened the bag and brewed it in the same small pot (best I can do without investing in a kyusu) as I'd been making the Fukamushi sencha (which had worked pretty well, actually), and it wasn't nearly as good as I remembered... bitter, etc. Well, then I went back to just making it in my IngenuiTea, and it was much better. Still have a propensity to overbrew, and I really have to watch it - if I turn my back for even 20 secs, chances are it's overdone.Victoria wrote:Green, Japanese - seconds can make all the difference.

Japanese greens... Don't really drink them nowadays, maybe I should.
Other teas hard to brew : Korean greens & Bi Luo Chun. I've overbrewed Bi Luo Chun so many times! At least I have something to learn from the tea

For some reason, I have the most trouble with white teas. I guess it's because I'm not as familiar with white tea as I am with the other teas I drink (like pu-erh, lapsang souchong, greens of various descriptions).
Lapsang souchong in my cup right now in an attempt to wake myself up. Tomorrow is Saturday, finally!

Japanese greens are too easy for me to overbrew. They aren't my favorites, but I enjoy them when I drink greens. I'm more a flavored green or full bodied black person.

Japanese greens. But that is mainly becasue that is the main tea that I drink.

Where I have trouble with these teas is that
my infusion times are just seconds to a minute, long enough for me to turn away. I'm less likely to do that with a gong Fu brewed sheng puerh I'm starting at 10", because there's not enough time for me to turn my back.

Japanese greens are tricky sometimes. I like them, but they're not exactly favorites.

Japanese Greens for me. I think that because I haven't learned how to brew them correctly, they are naturally not a favorite. It's kind of like plants in my garden - the fussy ones don't last very long!
No tea yet this morning - but it definitely won't be a Japanese Green.

Japanese greens are the most unforgiving of even a brief a loss of focus and attention - particularly shincha.
