Kagoshima Yutaka Midori "Kaoru Supreme LE" Parameters?

by bongoman » Jun 30th, '10, 21:11

Hi there

Just got my delivery from o-cha and brewed a pot of 2010 O-Cha Kagoshima Sencha Yutaka Midori "Kaoru Supreme LE"

I didn't nail it though and need to rethink how to brew this shincha.

Here's what I did:

3g tea to 150ml (5 ounces) water

78C water (172F)

45 second first infusion

But it was not as good as I know it should be - a little light.

I'm guessing I was too light-handed with the amount of tea? Maybe go to 4 or 5 g tea for 150ml water?

I used 4.5 grams per 5 ounces and was very pleased with this amount ... and tried higher and lower as well, but the .9:1 ratio seemed right.

I also preheated the pot and used water at 158-160*. I will have to try w/o preheating the pot, which I would normally do at a higher temp, 172-175*.

40 seconds or so is about right.

This really resteeps extremely well.

2nd 165* for 15-30 seconds
3rd 175* for 60 seconds
4th 185* or whatever for around 120 secs
5th ... up to boiling for whatever. This last steep is nice cool ... just sweet tea water.

Thanks Chip.

I brewed another pot of this tea at 0.9:1 and that hit the spot nicely.

Thanks
