with fried food...a nice oily dian hong...the kind that instantly stains anything it touches with it´s heavy tea oils

A black, of course!
A good, strong Yunnan w/milk will cut any excess oil from the frying.

High roasted, dark oolongs pair best with fried food for me. I imagine houjicha would pair nicely as well, though I don't have the experience to back it up.

I mixed earl grey creme and irish breakfast this morning - don't know why.. just felt like it. We are at our busiest at work this month and I need something strong for my "to go" tea infuser/desk at work.

I know Chip has stated this numerous times on the forum, we normally don't usually drink tea with our meals. However, we do enjoy genmaicha at our fave sushi bar with lunch.
We normally will have tea before or about 1/2 an hour after our meal.
Sencha this morning at our TeaTable in 'Tempest', while Shincha and Wulong enjoyed KittyTreats! While Space did her best imitation of 'VelcroCat' to date!

A roasted oolong or dark black I suppose.

Today I'm drinking Wei Shan Mao Jian; I think this one would fit well with smoked food, and possibly fried food too.

I dont usually drink tea with greasy fried foods. If i am eating fried foods, it is proabaly at a restaurant and i will reach for a soda. As for other food pairings, i usually drink my main tea of the day without food but I will usually do an infusion of whatever tea i am already drinking to go with lunch. Since cutting back on sodas, i will occasionally drink a young sheng with salty snacks like plain salted popcorn or crackers. Shu or a mild black seem to pair fairly well with homemade cookies/lightly sweet deserts.

For a breakfast fry up - sausage, bacon, blackpudding etc I opt for black with a little bit of milk. Young sheng is great after really greasy food.

I do enjoy fried foods, but rarely eat them any more, but I think they would work with a nice and robust tea, but for a while afterwards I think a nice puerh tea.

early 90´s Baozhong from IPT´s Chinese Tea Culture today....sweet fruity and very smooth. The roasting flavours are quite subdued with the fruit being the strongest flavour. I´m guessing it wasn´t re-roasted too recently 
It´s a bit annoying when I buy aged oolong and it´s been re-roasted strongly very recently so that it needs to be aged more to enjoy!
