Whats a good size oz wise?
What might you deem too small and why? depth important too I guess?

I don't think I ever saw a chawan listing its volume. They generally offer diameter X height. You want one that is wide enough for whisking. For a straight sided one, they start at around 4.75" wide.
Seriously, the volume is meaningless since you only do around 2-4 ounces at a time and they would probably hold 10 ounces easily.

Yeah, the big ones are huge, but you'll never fill it up, so I'm not sure if size means much, volume wise

one of the most important factors in choosing is how the chawan feels in your hands. they are never filled up to the top, so balance and ergonomics is foremost
if you have a friend that has a few maybe you can ask to try them out and see what your like
lastly, after ergonomics, also the lip of the chawan is very important. after all you'll be enjoying sipping from the tea bowl.
i shy away from straight edge ones that the side or body meets the floor of the bowl w/ a 90-degree angle as the chasen or whisk is round shaped and can actually function better.

I have found my flat bottom (but round in shape) chawan to produce the most frothy matcha with about 4 oz of water. Whisking is just easier with this amount of water (compared to less water) because the water level won't be so shallow.
I imagine that bowls of the "Ido" shape will work better with less water.
