One pot or several gaiwans

by Noonie » Sep 21st, '11, 19:57

I often drink three cups of tea in a session. Sometimes I use a glass teapot and I remove the Infuser after the tea steeps, then I pour out the tea into my cup...3 times in say a 10 minute window. While the last cup isn't as warm as the first, they were each equally good. When I use a Gaiwan I find myself using cooler water for the 2nd and 3rd cups, or I re-boil the water and the 2nd and 3rd cups don't taste the same (not as good).

What do you do?

I use a smaller teapot, and have 3 infusions in a 10 minute window.

When I used a larger teapot, I would have the teapot (in your case) (for me it was a pitcher) on a Tea Warmer with tealight, like this one from Dragon Tea House

The brewed tea stays warm whilst you are drinking the early cups.

What kind of tea are you drinking?

I drink greens and puerhs, both of which are meant to be steeped multiple times. The flavor evolves from one infusion to the next, so one infusion in one large pot would waste the tea's potential. My larger pots are stored away and only taken out for company. I use small gaiwans and small pots for everyday use.

I like the look of that pot warmer, thanks for pointing out that option.

I drink various types of oolong and dragonwell. The issue with the multiple infusions is the time involved. I know, it's not that much time to boil fresh water a 2nd and 3rd time, but I'm usually trying to enjoy some tea while spending time with my kid before bed, and getting up to fill/start the kettle, and again to rinse/steep/pour isn't always convenient. I do this sometimes, and agree about the different tastes over mutliple infusions, but this isn't always convenient. I like the idea of bringing my pot/cup to where we are and just hanging out while I enjoy my tea with whatever we're doing (and the more tea I can enjoy in this time the better).
