Re: Best temperature for summer Darjeeling green tea?
Recently preparing one green & one white from Jun Chiyabari, Nepal whose tea comes from the same mountain range as Darjeeling, I've found temperature is very flexible. I have been okay w/ a range of 70C to 85C but prefer 72 to 75. W/ the green, time has been quite important. Infusions of > 2 minutes brings out bitterness I don't want. The white benefits from more time when the temp. is < 80C.
This tea is not the same as Chinese green etc. It is its own sub-category.

I just like using boiling or near boiling water like I usually do with black/red tea and putting it in the fridge or freezer for a while to cool down. Then drink!
If I'm in a rush I'll brew it strong and use ice or just put it in the freezer. There are a couple other ways to get it to get cold fast too.
