Drinking from a Gaiwan - Oversteeping?

I just recently finished James Pratt's excellent Tea Treasury where he describes in detail drinking from a Gaiwan. This mostly makes sense. Put in leaf, put in water, stir for effect, then drink while using lid to keep leaf out of your teeth.

But if you're drinking your tea for a longer period of time, does this not cause the tea to wildly over steep? Even greens and oolongs?

You lower the temperature extremely.
