Made from leaves that have not been oxidized.

low caffeine greens?

I was just thinking, they should breed a low-caffeine Japanese Green varietal... Does anyone know of such a thing? Would be nice to be able to drink more Sencha/Matcha, without over-caffeination effects...

Closest thing I've read is "green" Kukicha (not the roasted kind- whatever that's called- it's low in caffeine too, but doesn't taste like sencha at all).

Of course, with my knowledge of green tea, we're kind of like the blind leading the blind.

Haha I don't even notice caffeine anymore during the school year my tea intake is something like this.
7:00 put the kettle on
7:10 matcha maybe 2
7:15 oolong brewed western style
2:45 3 cups of sencha
3:45 gong fu oolong
6:45 gong fu pu erh or some special expensive tea

I don't really feel jacked up ever, in fact I get a mellow high from the tea. It puts my mind at ease and makes life good. Mormons are really missing out on matcha :)

For me, it's not so much that I feel jacked up, but I get dehydrated if I drink toooo much tea.... I drink a fair amount, but would drink more if I could. c'est la vie!
