I have so many favorite types of tea and they vary in their sensitivity to temp, but for some it is really critical.

I have never used a thermometer or anything like that. I'll boil the water everytime and then wait a minute or so if I'm not brewing Shu or Blacks. Works for me.

temp is extremely important. If using the right temp for different kind of tea, then flavors are totally different. Supposed using over 95degrees water to infuse premium green tea, what the taste will be?? Or supposed using around 80 degree water to brew Rock tea, can you still taste the rock flavors?

Temperature is probably the most important of all the variables, and probably the least well-understood by the average brewer.

This morning, I'm falling back on a nice reliable cup of ali shan from adagio...

In my cup this morning Imen's Lion Head Huang Zhi
1st Infusion Hot
2nd and 3rd A little less
4th on wards less hot again

I believe it's important but I don't/can't stress over it. I drink most of my tea at work and so am at the mercy of break times and kettle temperature. I try to pay attention to "hotter for black tea", "cooler for white".
