I suppose it's down to personal taste. A discerning palate is certainly required to identify the subtle differences between some senchas.

Not possible and for freshness I generally just open one package of sencha and use it until it is gone. On rare occasions I'll have two open if I need to compare... Generally it is all I make but my wife makes other stuff that I have from time to time plus I have my usual matcha so sencha isn't ALL that I drink. It is the most common one for sure though, all day at work, sencha, sencha, sencha... never bored.

Greens are a spring and Autumn thing for me. As much as I'm looking forward to Shincha... its still half a year til gyokuro.

I usually jump between Pu-Erh and Oolong and White. All along - I always keep my mornings free for Sencha or Matcha.

Not that all sencha is the same. Each region has it's own unique tastes, but I think taste in oolongs can vary more greatly.
taste in green tea varies a lot more than taste in sencha too...
