With my little gaiwans, I can hold the entire stack--lid and base and cup--with one hand for the hottest teas, and use that to help avoid burning my fingers when I do my puerhs, but for the oolongs and green teas, I often just pick up gaiwan and lid the usual way.

I do it one handed, but I don't pick up the saucer with it. I bend my index finger and put the knuckle on the lid, with middle finger and thumb holding the edge of the gaiwan. Probably not the proper way to do it, but the easiest way I've found so far.

The way I do it in the demo linked above, I basically pin the cup between lid and base, and never touch the cup itself, so lots less chance of burns--as long az the gaiwan stays firmly pinned in place.

That is possible if the gaiwan is small or you have a bigger hand. I couldn't get that technique to work. Dropped the cover, lucky not damaged :?

I just mastered a one handed pour this weekend. I hold the Gawain by the lip on each side, and the lid with my index finger. As long as I get the pour fast enough I avoid a burn :). I had not seen the method holding the saucer as well, I will have to give it a try. But I think my 150ml size will be a bit large for this.

My largest holds about 4 oz, and it's a stretch with that one, but easy and natural with the 2 oz size. OTOH, no grip is sufficiently protective with the 1 oz sets, which did not come with saucers.
