I'm just curious. Do you all have a preference for a particular shincha? From Uji? Kagoshima?? Shizuoka??? Or do you like all of it????

I can't really speak for everyone, but my preferences tend to follow my general preferences for sencha in general. Usually you can find shincha version of all regular sencha. As the taste of ther shincha version isn't drastically different than the regular version, it is quite easy to find a shincha to your taste.brlarson wrote:I'm just curious. I am so in love with Japanese greens and can't wait for my first sincha!
I had an unusual sencha today at work- not so greeny more hojicha-y. I bought it at the local Japan mart to use at work. Tasty but does not satisfy my craving for the green taste in japanese greens. I tried to google the name of this tea but was not very successful. DH is back from his trip with the digital camera- I'll try to take a pic and post over on the green thread to see if anyone can tell me more.[/code][/b]

That is a challenging question, or easy. Basically I enjoy the shincha versions in the same order for the most part as non shincha versions of the same teas. Kagoshima is my current fave prefecture for sencha. Tough call on the rest of the order, and Yame does need to be in the mix even though it is not as available.brlarson wrote:I'm just curious. Had this one a few months ago, no wait, that was Fuji The Ultimate Fukamushi from Shizuoka versus Yame. Hmmm... I was hoping to narrow the field a bit, but thank you all for your advice. I'll probably limit myself to two types this season. Yame shincha, eh? I have an unopened gyo from Yame. Yup, pretty much this. I've been trying to drink my greens at a rate in which I'll need to buy more when the spring harvest starts rolling out.cherylopal wrote:GREEN!!!!

Heh. Dark is good. Awaiting high elevation blacks (Kenilworth, Darjeeling 1st Flush) and fresher China blacks (Yunnan and Keemun), and darker oolongs, but meanwhile am set to try greener oolongs, under expert guidance from afar.
Got an order in for a Malkaibari Organic FT 2008 Autumnal, supposedly much better than previous years. We shall see if this is growers hype or not.
Finally going to give in and buy matcha again. Been awhile. Will wait patiently for the Green Season.

For the first steep I do 165-168 degrees for 50-60 seconds. I use about 4.5-5 grams in my 9 oz kyusu. Second steep is usually around 175 for 15-20 seconds.
