Storing Yixing teapots in the fridge

by bagua7 » Dec 10th, '10, 04:21

Sometimes I can't finish tea I have been brewing in a pot so rather than leaving it outside for two days before I have another session, I just store it in the fridge. That way the tea won't rot or become mouldy.

What do you think? Will the pot crack after repeated times of storing it in the fridge and then defrosting it outside at room temperature.

You'll minimize the risk of cracking the pot if you make sure it has cooled off before you put it in the fridge. Also, the same goes for when it comes out of the fridge (let it warm to room temp before pouring boiling water on/in it).

And it should go without saying that if your fridge has ultra-cold spots where stuff freezes, you should keep the pot far from those areas. Anything that involves formation of ice crystals could be devastating to the tea pot (and you're putting it in the fridge with very moist leaves).

I have done this regularly without any problems... I also run cold, then tepid, then warm water over the pot before use.

Mmmmmm fridge flavoured tea

tea leaves readily absorb odours from their surroundings...and I know some people use tea leaves in their fridges like baking soda to absorb the bad smells.

do you really want to brew fridge flavoured tea?

You should know that water has an anomaly: its density decreases upon freezing. In another words, 1L water will occupy more than 1L volume if it is frozen. On the other hand, your yixingpot shrink upon cooling.
The problem is unlike porcelain, yixingpot has a lot of pores.

This means, any water trapped between any pore, will occupy larger volume when it freezes. So... theoretically you're slowly tearing apart the pot internally.

 Our fridge smells like homemade kimchi, so this is definitely not an option for me.
