Help on rebrewing and storing greens!

by garrettmc » Dec 27th, '10, 19:00

I have a starter set from Adagio that includes dragonwell, citron green, jasmine chun hao, and genmai cha. I know that you can rebrew greens, but i have some questions:
1. How many times can you rebrew it?
2. How long does each rebrewing need to steep?
3. What temperature?
4. What is the best way to store tea that is awaiting a resteep? (Say I wanted to resteep later that afternoon?)
Thank you guys so much for your help!!! :D

Hello there!

1. How many times can you rebrew it? depends on which tea! some 3 or 4 at least..some more
2. How long does each rebrewing need to steep?also depends on the tea! for example sencha the second steep is usually shorter..then back to longer for the subsequent ones
3. What temperature?again..depends..dragonwell a bit hotter than genmai for example
4. What is the best way to store tea that is awaiting a resteep? (Say I wanted to resteep later that afternoon?)I keep it in the pot i made it in..just make sure its well drained
Thank you guys so much for your help!!! :D
I know there not a lot of definitive in my answers..but you will find looking around on here for specific type teas that it varies widely on brewing parameters. and even inside types..like asamushi vs fukamushi senchas.

Greens are very tricky, the only thing you can do is run experiment after experiment developing the brewing method that suits you. The only basic rule about greens is to avoid hot water. So I would suggest to put 2 full teaspoons of tea per 200-250 ml of water and play with these parameters: 2-5 mins per brew, 60-80C. The longer you steep and the hotter water you use, the more bitter the tea will be.

You can re-brew it as many times as you wish, until it loses the taste and aroma. Usually it's 3 brews but this depends on the temperature and waiting time you use (and the quality of tea of course).

As for storing, I just leave the leaves in the pot. However try to limit the storing time because the green seems to lose it's qualities quite quickly. I attempt to use out all the brews within one hour max. But again, just experiment and see what happens.

Thank you :)! I have yet to rebrew the greens, but I left my white peony in a small airtight container for a day or two (I was not yet ready to use it again), and the second brewing was the best white I have tasted so far! I can see how opinions vary greatly, for I have read elsewhere that whites shouldn't even be rebrewed.

Yeah, I too like the 2nd and 3rd brew of white peony more. But that's probably because I don't like white tea very much :) The 2nd and 3rd brew doesn't have that strong white-tea taste. Also I like white peony much more than silver needles because it is less pure, in white peony white tea seems to be slightly mixed up with other stuff.

Also as far as I know white tea should be brewed with colder water and longer waiting time. I think something around 60C and 5-10m. But I haven't experimented with it much because I don't like it very much
