So my absolute favorite tea is the miyazaki koube shiage from yuuki-cha... it's always been delicious, kind of similar to yancha. I've got an ounce or two from last year's harvest, I had some about two weeks ago and it tasted fine. I have been tasting a bunch of samples so I hadn't opened it for a while.
I brewed some today, same parameters as usual, and it was suddenly very sour. Can I save the tea? It's been stored in a mason jar in very dry conditions, theres no mold or anything... I was thinking I could try re-roasting it, but I wasn't sure how to do that since this is a curly japanese pan-fired oolong. I've only re-roasted flat yanchas and TGY so I'm not sure how to go about it.

You can refresh the tea. I have the same one from 3 years ago and after refreshing, it tastes quite good. I use a hojiki, bought from Yuuki-cha, to roast. Low heat, slowly. Judge by color and aroma when the tea is done. Be on the safe side and under-roast. You can always put back on the burner if you need more.

Never had a Chinese oolong go sour, except for using too much leaf with a roasted Taiwanese oolong (due to all the stems). Must be something with the processing?
